Methods for assessing the meat productivity and carcass quality of livestock animals

Assessment of meat productivity and growth rates

The efficiency of meat livestock production directly depends on the ability of livestock animals to convert feed nutrients into high-quality muscle tissue. To monitor this process, two assessment methods are used: live and post-slaughter. While the animal is alive, its body condition (visually), muscularity, and average daily weight gains are assessed. The final assessment is carried out after slaughter based on carcass weight and yield, the ratio of lean meat to bone, and the chemical composition of the meat.

  • Cattle growth rate — 800–1200 g/day
  • Pig growth rate — 400–900 g/day
  • Sheep growth rate — 200–400 g/day
  • Chicken growth rate — 30–40 g/day
  • Feed consumption (cattle and sheep) — 8–9 feed units per 1 kg of weight gain

For accurate productivity accounting, the intake weight of the animal is determined. It is calculated by taking into account deductions for hide contamination, pregnancy of females, and the content of the gastrointestinal tract.

The deduction for the gastrointestinal tract content is determined as a result of pre-slaughter fasting of livestock animals without feed:

  • cattle and sheep — 24 hours;
  • pigs — 12 hours;
  • poultry — 5–6 hours.

Calculation of slaughter yield and carcass quality

After stunning, bleeding, and dressing, the slaughter weight is determined — the weight of the warm carcass after complete processing. A carcass is understood as the body of an animal without the hide, head, feet, internal organs, and internal fat. The ratio of slaughter weight to pre-slaughter (intake) live weight is called slaughter yield.

Please note: a pig carcass, unlike carcasses of other livestock species, can be processed and evaluated either skinless or with the hide on.

Slaughter yield (Sy) is calculated using the following formula:

Sy = Sw / Lw × 100 %, where Sw — slaughter weight of the warm carcass (kg), Lw — pre-slaughter live weight of the animal (kg).

Carcass quality depends on the ratio of muscle, fat, bone, and connective tissues. On average, the lean meat in a carcass accounts for about 80%, and bones for 20%. The mass of blood makes up 5–6% of the live body weight. The tissue ratio changes with age, which is clearly demonstrated by the results of research:

In the meat industry, "meat" is understood as skeletal muscle with bones, as well as adjacent fat and connective tissue (tendons, fascia, ligaments). During boning, meat is completely freed from bones, cartilage, tendons, membranes, lymph nodes, and visible fat. At the same time, thin intermuscular layers, which create a valuable "marbling" structure, always remain in lean boned meat. The energy value of 1 kg of beef is 1600 kcal.

Individual parts of the carcass differ in nutritional value, tenderness, and culinary value. The most valuable cuts contain maximum muscle tissue with thin fat layers. The taste of meat directly depends on its juiciness, tenderness, color, and aroma. Carcass cutting into grades is carried out according to established schemes.

Graded carcass parts of livestock animals and poultry:

  • Cattle: hip, loin, back, shoulder blade, shoulder, brisket, neck, flank, neck thick end, fore shank, hind shank.
  • Pigs: shoulder blade, back, brisket, loin with flank, ham.
  • Sheep: hip, loin, shoulder-back (including breast and neck), neck thick end, forearm, shank.
  • Horses: neck, shoulder-blade, back, brisket, loin, flank, hip, fore shank, hind shank.
  • Broiler chickens (carcass cutting): breast, leg quarters, wings.

After slaughter and processing, ready rabbit carcasses are cooled, stored, and sold whole, figure 6.

Task 4. Familiarize yourself with the methodology of grading (bonitirovka) of beef cattle ("On the Procedure and Conditions for Beef Cattle Grading", Order of the Ministry of Agriculture of the Russian Federation No. 270, 2010).

Assessment of breeding and productive qualities of breeding animals in August-September. Grading (bonitirovka) of breeding beef cattle is carried out, excluding oxen, castrates, and fattening animals in all organizations that have the specified production as of October 1.

The milkiness of cows is assessed by the live weight of their offspring, which is determined at the age of 205 days, or recalculated for this age. When assessing the milkiness of 1st and 2nd calving cows, the minimum requirements for the live weight of young stock are reduced: for the 1st calving – by 10%, for the 2nd calving – by 5%.

The milkiness of cows of the 3rd calving and older is assessed based on the data of the calving from which the descendant with the highest live weight at the age of 205 days was obtained.

The reproductive capacity of cows is assessed based on zootechnical and veterinary records (fertility, dry period, service period, gynecological diseases, and barrenness). Assessment of reproductive capacity in cows begins from the 2nd calving.

For stud bulls, the development of the testes is assessed, and sexual activity, ejaculate volume, and semen quality are determined.

Assessment of the exterior and the expression of body type in cows is carried out based on constitution and exterior at the age of 3 and 5 years; in bulls — annually, from 2 to 5 years of age.

The exterior traits of young animals are assessed based on the overall development of the livestock animal, using a 5-point scale:

  • excellent — 5;
  • good — 4;
  • satisfactory — 3;
  • unsatisfactory — 2.

Determination of the class of stud bulls. The elite-record class includes stud bulls that have a live weight corresponding to the requirements of the elite class or higher, breed purity of at least the IV generation, a minimum comprehensive score for the expression of breed type of 11 points, and are assessed based on their own productivity as at least elite class or higher.

Comprehensive elite-record and elite class, selection index "A" of at least 110 points, offspring quality index "B" of at least 102 points; establishment of the authenticity of their origin.

Determination of the class of cows. The elite-record class — cows with a live weight, milk yield, reproductive capacity, exterior, and expression of body type not lower than the requirements of the elite class, breed purity of at least the IV generation, having a genotype of at least 11 points; the elite class — at least 9 points.

In all organizations possessing breeding cattle (stud bulls, cows, bull calves, and heifers) of the meat production direction, at least 3–5 stud bulls are assessed annually, each of which is assigned purebred cows no older than the seventh calving.

Testing of young animals is carried out at standard testing stations (a specialized organization for testing, intended for conducting tests of established types of animals), designed for 200 heads, or, in their absence, in specially converted cattle sheds with loose housing in groups of 20–30 heads.

Based on the data from the bonitation (evaluation) of cattle of the meat production direction, a summary sheet and a report are compiled with an analysis of the following issues:

a) the number of evaluated cattle and their distribution by breed purity, classes, purpose, and genetic groups;

b) the characteristics of the herd and individually of the cows in the breeding core by live weight, exterior, expression of body type, milk yield, reproductive capacity, and development of young animals;

c) age and live weight of heifers at the first insemination;

d) results of bull calf testing based on their own productivity;

e) results of the assessment of stud bulls based on the quality of their offspring;

f) fulfillment of the selection and breeding work plan.
